Responsible Recipes: Three Capes Tiramisu

It's Italian! Of course it's a dessert with coffee and alcohol!

Impress your friends and family this year with an extra delicious, easy to prep,  Three Capes Tiramisu.

Tiramisu
Ingredients
2 tsp Three Capes coffee powder
1 tbsp Rum
2 tbsp coffee liqueur
250g tub mascarpone cheese
85g condensed milk
1 tsp vanilla extract
4-6 Savoiardi Ladyfingers
1 tbsp unsweetened cocoa powder

Quick Recipe:
Prep Time: 20 mins
Cooling time: 1-2 hours based on texture

STEP 1: Prepping your coffee elixir
Mix Three Capes coffee granules with 2 tbsp boiling water in a good size jug and stir to combine. Add the coffee liqueur and 75ml cold water. Pour into a shallow dish and set aside to cool.

STEP 2: Cream time!
Make the cream layer by beating the mascarpone, condensed milk and vanilla extract with a whisk until creamy and smooth. We recommend using a proper beater for this.

STEP 3: Fingers and layers.
Break the sponge fingers into two or three pieces and soak in the coffee mixture for a up to 5 seconds. Layer the fingers into a container of your choice with the cream. Top it off with the sprinkle of cocoa power and chill for at least 1 hr before serving.

Bonus addition: Pour any extra coffee/rum mixture over the cream layers to give it an extra little kick.
